Goodbye Spring...

It was a lovely spring. Some cold and chilly days, some rainy days, a few too-hot days, but all in all, I really enjoyed it. Easter was very nice, and the grass and trees got so green. The violets, the lilacs...the pleasant evenings when I slept with the windows open.

Rather than June 21st (or round-about), I know a lot of people consider Memorial Day the unofficial start of summer, but for me it was always the first day of summer vacation, once school was out. And even as an adult, if you have kids, it still sort of can feel that way. But it's beein in the 90's and a bit humid, so I guess ~ summer's here!

I have photosensitivity, so I have that love/hate relationship with summer. I get tired of slathering on sunscreen constantly, and the uncomfortable and sore rash I can get, sometimes even with sunscreen. Even when I stay out of the sun, the heat and humidity make me feel ill. But yet there is also that wonderful part of summer. Watermelon, swimming, fishing and boating, cook-outs, popsicles, the smell of chlorine in pools, cool breezes on beautiful summer nights....so, I am looking forward to our homeschool year ending in a few weeks and summer vacation kicking in.

What are some of your favorite things about summer? Does it make you feel nostalgic at all, like when you were a kid during summer break? It makes me feel like that very much so. And the older I get, the more nostalgic I get. I love anything retro or old fashioned now. And even though I don't live at the beach, I enjoy feeling like I do ~ in our little cottage house.

I will start posting some recipes soon. Today we are heading out to a homeschool cook-out and my daughter and I made orange coconut balls and a three bean salad to bring. Don't you hate it when you make something to bring somewhere and it doesn't come out as good as it usually does all the times you make it at home? That is what happened with my bean salad. It's good, but it just doesn't seem as totally awesome as it usally is. And of course, no one will notice because they have never had my three bean salad before, but *I* will know, lol! I probably have a tad bit of OCD because things like this drive me crazy. Oh well. It is still tastey. Just not totally, awesomely delicious. ;)

November 11, 2010

~ Blessings, love, and many heartfelt thanks to all Veterans out there. ~

It seems like November is flying by! October through December is my favorite time of year. I love autumn ~ beautiful foliage, apples, pumpkins, the cool crisp air. I love walking through fallen maple leaves, the crunch, the scent...  And as the nights start getting colder and people get the old wood stoves going, I love that woodsy smokey scent when you walk outside. I even like the longer, darker nights. There is something so cozy and comforting about being inside, cooking a warming meal for your family. Seeing lights in the darkness from across the street and down the road from neighboring homes. A few of my neighbors have those Christmas candle lights in their windows already. I love it.

I need to start planning for Thanksgiving. (I am aiming for getting my Christmas page filled more here on the blog since it takes such time to get a blog going. Next year I will have a Thanksgiving page, so please bear with me this year.)

How do you all celebrate Thanksgiving? I miss the holidays from my childhood. They were big family gatherings. Now it is a very small gathering. People have divorced, and/or moved away, and sadly, passed away. I never get used to it either. I think all of us miss it. But as the saying goes, it is what it is.

What are you all making this year for Thanksgiving? I definitely do turkey every year. More and more, I hear people say they don't do turkey. They really just don't like it that much and so have started their own new traditions. I say whatever works for your family is the best to do. You should enjoy the holidays. My hubby and daughter love a big turkey dinner, and so do I. So we go very traditional. Home made mashed potatoes and gravy, butternut squash, cranberry sauce, and stuffing. I make bread stuffing every year, and some years I also make an Italian meat stuffing from my childhood Thanksgivings - it's so good! (Next year I will try and get the recipe for it posted here on a Thanksgiving page.) And I make creamed onions. Some years I make sweet potatoes. Sometimes hubby likes to make a green bean casserole, if he's in the mood for it. And then the typical pies for dessert. Pumpkin (and sometimes squash pie). Chocolate cream. Sometimes apple. Sometimes banana cream or pecan.

As a child I took over the job of making stuffed dates. Now my daughter and I make them together every year, with the parade on the TV in the background. The recipe:

STUFFED DATES

pitted dates - whole
peanut butter
walnuts (optional)
sugar

* Make a slice in all the dates, cutting down one long side (don't cut them in half, you are just making a long slit to be able to stuff them with fillings)

* Put some peanut butter in each date, and a piece of nut (if using nuts)

* Roll dates in sugar and place on a small platter

OPTIONS:  You can use cream cheese or mascarpone instead of peanut butter. You can use dried cherries, cranberries, etc. instead of, or in addition to walnuts. You can of course use any kind of nut you prefer. You don't have to roll in sugar if you have diabetic guests or just prefer not to use sugar (but it really tastes so good and makes them sparkle and look nice too).

Enjoy!

Welcome To Crescent Cottage!

It's a little online housewarming party! I hope you all will drop by often to chat and have some coffee, tea, or cocoa. With the temp in just the 40's this week, I am up for a cup of something warm.

I'll introduce myself, and hope you will introduce yourself sometime as well. I'd love to hear from you.

Well, first off, I am a wife, and a mother of one beautiful daughter. I live in New England in the good ol' USA. We have 2 cats and a dog. I will be turning 4o in about a month (that feels weird to think about). Hobbies have been pushed aside for quite a while due to busy life, stress, exhaustion....I'm sure I am in good company here. So despite the economy, I have just cut my hours at work. (I pray it was the right decision!) I work part-time with special needs children and sub at elementary schools. I am not quite sure I remember what all my hobbies and interests were, pre-mom days and pre busy, crazy, broke, and too-tired days. Maybe it will all fall back into place, or maybe I will even discover something new. I have some health issues which have really worn me down, but I hope now I will really start learning  to take care of myself and stop running on empty. Stress is such a killer. It's not good to hit rock bottom, but when you do, you finally realize if you want to be around for your loved ones, you need to make changes, and soon.

I hope to share life stories, recipes, hobbies, crafts, and what-not here with you. Please come by often as I will be adding a lot and updating frequently.

Thanks for dropping in ~ ttyl!
